Lentils image

In Italy, lentils are thought to bring prosperitywhen eaten on January 1 because they resemble little coins.

Number Of Ingredients 4

2 cups lentils
Dried bouquet garni
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper

Steps:

  • Bring lentils, 3 cups water, bouquet garni, salt, and pepper to a boil in a medium saucepan. Reduce heat to medium-low. Simmer until lentils are tender; begin checking after 20 minutes (cooking time will vary). Discard bouquet garni.
