LENTIL AND TOMATO SOUP image

Yield 4 servings.

Number Of Ingredients 12

-1 C dried lentils
-1/2 t salt
2 t chopped garlic
3/4 C chopped onions
3/4 C chopped celery
3/4 C peeled, chopped carrots
1/4 t thyme
1/4 t oregano
1/4 t ground black pepper
2 1/2 C canned diced tomatoes, w/ liquid
1 T red-wine vinegar
4 T nonfat sour cream

Steps:

  • 1. Place the lentils, salt, and 3 C water in a 4-5 qt pot. Bring to a simmer, and cook, partially covered, 20 minutes. 2. Stir in the garlic, onions, celery, carrots, thyme, oregano, and pepper and simmer. 3. Stir in the tomatoes and simmer, partially covered, 15 minutes. Stir in the vinegar. 4. Top your bowl of soup w/ sour cream
