Lemonhead Cookies image

I found this recipe online and made some adjustments to the recipe so that it wasn't so sweet. The original recipe called for making a lemon icing, but I wouldn't unless you like super sweet cookies. These cookies are very addictive! I would suggest using a nonstick cookie sheet or a silpat because the crushed lemon heads melt...

1/2 c unsalted butter, softened
1/2 c white sugar
1/4 c brown sugar
1 tsp lemon extract
1/2 tsp vanilla extract
1 egg
1/8 tsp salt
1/2 tsp baking soda
1 1/2 c all purpose flour
1/2 c lemon heads candy (3 ounces or heaping half cup), crushed

Steps:

  • 1. In a small bowl combine the salt, flour, and baking soda. Set aside.
  • 2. In a medium sized bowl cream softened butter, white sugar, and brown sugar until light and fluffy.
  • 3. Add in egg, lemon extract, and vanilla. Beat until incorporated. NOTE: Adjust the amount of lemon extract to your liking. The vanilla in this recipe is optional but I like the flavor of vanilla and lemon together.
  • 4. Add the crushed lemon heads to the butter/sugar mixture and combine.
  • 5. Add the flour mixture to the butter/sugar/lemon head mixture and combine. (The dough may be a bit stiff)
  • 6. Form into 1 tablespoon sized balls and place on a cookie sheet. Flatten the cookies slightly.
  • 7. Bake in a 350 degree oven for 10 to 12 minutes or until golden brown.
