Lemon Tea Bread image

1/2 c butter, softened
1 c sugar
2 eggs
1 1/2 c all-purpose flour
1/2 tsp salt
1 tsp baking powder
1/2 c milk
2 Tbsp grated lemon rind, divided
1 c powdered sugar
2 Tbsp fresh lemon juice
1 Tbsp granulated sugar

Steps:

  • 1. Beat softened butter until creamy. Gradually add 1 cup sugar and beat till fluffy. Add eggs, one at a time, beating just enough to blend.
  • 2. Stir together flour, salt, baking powder and add to butter mixture, alternating with milk. Begin with flour mixture and end with flour mixture. Stir in 1 tablespoon lemon rind. Bake in greased 8 x 4 loaf pan at 350 degrees for 1 hour.
  • 3. Icing: Stir together powdered sugar and lemon juice until smooth. Spoon over top of cooled bread. Stir together remaining tablespoon of lemon rind and tablespoon of granulated sugar. Sprinkle on top of bread.
