Lemon-Rosemary Chicken Salad Topper image

Fresh rosemary and lemon zest give this chicken salad its wonderful aroma. Put it on crackers with lettuce, and that's one tasty app!

Number Of Ingredients 8

1 small boneless skinless chicken breast half (4 oz.), cooked, finely chopped (about 1 cup)
1/4 cup finely chopped celery
1/4 KRAFT Light Mayo Reduced Fat Mayonnaise
1 tsp. lemon zest
1/2 tsp. chopped fresh rosemary
1/4 tsp. pepper
2 large leaf lettuce leaves
24 whole wheat saltine crackers

Steps:

  • Combine all ingredients except lettuce and crackers.
  • Refrigerate 1 hour.
  • Tear each lettuce leaf into 12 small pieces; place on crackers. Top with chicken mixture.
