Lemon Pound Cake image

I can't take credit for this cake. This used to be on the side of the Duncan Hines box. For a quick and easy dessert, this cake can't be beat. My family loves it, they also think I slave in the kitchen to make it. I just smile and say thankyou!

1 box duncan hines lemon supreme cake mix
1 (3.4 oz) pkg instant lemon pudding
4 large eggs
1/3 c vegetable oil
1 c water

Steps:

  • 1. Pre heat oven to 325 degrees. Spray Bundt(tm) or tube pan with your favorite baking spray and set aside. Place 1 box of lemon cake mix and 1 box instant lemon pudding into large mixing bowl. Hand stir to mix.
  • 2. With the stand mixer on low speed alternately add eggs, one at a time, with water, and oil. Once all ingredients added, stop mixer and scrape down sides and bottom of bowl. Restart mixer and blend batter for 2 minutes(and no more) on medium speed. Batter will be smooth at the end of 2 minutes.
  • 3. Bake at 325 degrees for 35 to 40 minutes. Turn cake pan half way through the baking process. Cake is done when cake tester (toothpick) comes out clean. Let cake cool for 10 minutes in pan. Turn out onto cooling rack until completely cool.
