Steps:
- Preheat oven to 375 degrees. Pulse bread in food processor. Spread bread on baking sheet. Drizzle with oil. Bake for 5 mins. Cook pasta. Heat 1 tbsp oil with anchovy paste 1 min. Add garlic, onion, shallot, lemon juice and zest, red pepper flakes, basil, and parsley. Cook 5 min. Add mushrooms and zucchini. Cook 5 min. Add pasta, spinach, arugula, wine and pasta water. Cook 5 min. Top with parmesan, bread crumbs, and pine nuts.
