3 shallots
1 clove garlic
1 1/2 cup orzo
1/2 cup white wine
3 cups broth
4 cups baby spinach
1 lemon, zest and juice
3 tbsp. unsalted butter
1/3 cup parmesan cheese
s & p

Steps:

  • Cook shallots in olive oil, add the garlic add the orzo and cook til brown add the wine and cook til absorbed, then add the broth, a little at a time Stir in the spinach til wilted Add the zest and juice, the butter and cheese Serve warm
