Lemon Meringue Pie image

When my husband and I were first married, his mom gave me three of his favorite pie recipes and this is one of them. He still loves this pie.

Number Of Ingredients 5

2 large eggs, separated
1/2 c fresh lemon juice (3 lemons)
1 can(s) sweetened condensed milk (not evaporated)
1 tsp pure vanilla extract
1 regular graham cracker pie crust

Steps:

  • 1. Beat egg yolks slightly. Add lemon juice, condensed milk & vanilla. Mix well then pour into graham crust, add meringue & brown. Cover & refrigerate several hours before serving.
  • 2. I wash, dry & use the plastic top that comes with the graham crust to keep pie covered.
  • 3. MERINGUE: 2 egg whites 4 Tbsp sugar 1/8 tsp cream of tartar* dash of salt 1 tsp pure vanilla extract Beat egg whites w/electric mixer until frothy. Add in the cream of tartar and salt and continue beating another minute or two. Add the sugar and beat until stiff peaks form (about 2 minutes). Add in the vanilla and beat for another minute or so. Spread onto pie & bake @375 until brown (about 10 or so minutes).
  • 4. * If you don't have cream of tartar you can use 1/2 teaspoon of baking powder. If you don't have baking powder just use a little more than a dash of salt.
