Lemon-Lime Rice image

This is my all-time favorite rice dish. It's really easy to prepare and it goes quite well with a variety of different main dishes. But my preference is to serve it with baked chicken breasts with a tangy lime sauce, such as Lime Sauced Chicken.

Number Of Ingredients 8

2 c white rice (basmati is a nice choice, but any white rice is ok)
4 c boiling water
1 Tbsp butter
1 Tbsp chopped fresh herbs (good choices are basil, rosemary, oregano, parsley, cilantro, thyme)
1 1/2 tsp grated lemon zest
1 1/2 tsp grated lime zest
1/2 tsp salt
1/2 tsp lime juice

Steps:

  • 1. Cook rice for 5 minutes in a saucepan with briskly boiling water and butter, stirring once. Cover the pan, turn the heat off, but leave the pan on the burner undisturbed for 15-20 minutes.
  • 2. After the rice has absorbed the liquid and is light and fluffy, add the selected herb (or herbs), lemon zest, lime zest, salt, and lime juice. Stir well.
  • 3. Serve warm.
