Steps:
- Preheat oven to 400* F Place carrots & onion in the middle of an 11x14 baking dish In a small bowl, combine sage, thyme, rosemary, garlic, salt & pepper Squeeze the lemons over the chicken & stuff the lemon rinds in the cavity of the chicken, once all the rinds are in, tie up the legs with string/twine. Rub spices all over chicken, under breast skin & place on top of carrots & onion breast side up Pour chicken broth in bottom of pan Place Chicken in oven for about 10-15 min, then lightly cover the chicken with foil and reduce the oven to 250*F for another 2.5 hours, checking chicken every 30 min & basting. goes GREAT with steamed broccoli & garlic mashed potatoes!!
