LEMON GARLIC SCALLOP KABOBS image

2 garlic cloves pressed
2 T. olive oil
2 T. minced parsley
1 t. minced fresh oregano
1 t. grated lemon rind
1/4 cup fresh lemon juice
1/4 t. salt
16 skewers
16 sea scallops (about 1 1/2 lb.)
4 lemons, halved

Steps:

  • 1. Saute garlic in a lightly greased skillet over medium heat 3 minutes or until lightly browned. Remove from heat, and stir in olive oil, parsley, and next 4 ingredients. 2 Using double skewers (two skewers placed side by side), thread on 1 scallop, 1 lemon half, and 1 scallop. Repeat with remaining scallops and lemon halves. 3. Grill kabobs, covered with grill lid, over medium-high (350 to 400) DIRECT heat 9 to 10 minutes or until scallops are done, turning and basting often with lemon juice mixture. Serve with pasta and parsley. Squeezed the grilled lemons over the scallops and mix with the pasta and juices.
