Steps:
- 1. zest lemon, set aside.
- 2. In a pot, place rice and water, add lemon zest and squeeze the lemon juice (discarding seeds) add salt to taste.
- 3. bring to boil, then to low for 20 mins...add fresh chopped cilantro and gently stir...serve as a side. Yummy
