LEMON CHERRY COOKIES image

1/2 cup Butter or Margarine
1/2 cup Sugar
1 Egg, seperated
1 t. Lemon Peel, grated
1 T. Lemon Juice
1 cup Flour, Unsifted
1/2 cup Pecans, finely chopped
24 Candied Red Cherries

Steps:

  • In small mixing bowl with electric mixer at medium speed, cream butter and sugar until light and fluffy. Add egg yolk, lemon peel and juice and beat until well blended. Gradually add flour and beat until well mixed. Wrap and chill dough for at least 3 hours or overnight. Divide dough into quarters. Divide each quarter into 6 pieces; roll each piece into a ball. Dip each in slightly beaten egg white and then into nuts. Place on ungreased cookie sheets. Insert cherry into center of each. Bake at 350 for 15 minutes or until lightly brown on the bottom.
