Steps:
- 1. Have noodles cooked, rinsed and drained well. Preheat oven to 350 degree F. Prepare a baking dish with non stick cooking spray. ( I used a 9 x 13 baking dish ).
- 2. In a medium skillet, season and brown the sausage or ground beef with salt, pepper and garlic powder; drain. Set aside about 1/2 cup browned sausage. Place the rest back in the skillet.
- 3. Slice the pepperoni into 1/4 pieces. add about half to the sausage or burger. Add the sauce. Bring to a simmer, just long enough to get the flavor of the sausage and pepperoni flowing. Spread an even amount of sauce into the bottom of prepared baking dish.
- 4. In a medium bowl, mix ricotta, oregano, basil, 1/4 cup parmesan , 1/2 cup mozarella, egg, chives, salt and pepper, to taste.
- 5. Take a lasagna noodle, spread about 2 heaping tablespoons of ricotta mixture over each noodle to within 1/2 in. of edges. Top with a sprinkling of sausage, pepperoni. Spread about 1 tablespoon of sauce on top.
- 6. Carefully roll the noodle and place seam side down in prepared baking dish.
- 7. Sprinkle 1/2 cup mozzarella and 1/4 cup parmesan over the noodles. Now, spread remaining sauce evenly over the noodles, making sure the noodles are covered, so not to dry out.
- 8. Sprinkle remaining cheeses evenly over the sauce. Sprinkle with parsley if so desire. Place in preheated oven and bake 35 - 40 minutes or until bubbly and cheese is browning. I leave mine stand 5 minutes before serving.
- 9. Use whatever other fillings you desire. Enjoy!
