Layered Cauliflower Salad image

My Son-in-law loves this salad. I always double it when I know he's going to be at the dinner table. That way I know there will be some leftovers for him! This is one of those salads that tastes even better on the second day.

1 small head cauliflower, cut into bite size pieces
1 small head of lettuce, torn into bite size pieces
1 small purple onion, diced
1/2 lb bacon, cooked and crumbled
1 c mayonnaise
3 Tbsp sugar
1 Tbsp milk
1/2 c parmesan cheese

Steps:

  • 1. Layer lettuce*, cauliflower and onion in a 3 qt. bowl.
  • 2. Mix the mayonaise, sugar, and milk together and spread evenlyh over top, sealing to the edge of the bowl.
  • 3. Sprinkle bacon and parmesan cheese over the mayonaise mixture.
  • 4. Garnish with a little more chopped lettuce and onion for additional color. Cover salad tightly and refrigerate for at least 12 hours
  • 5. NOTE: After washing the lettuce make sure it is very dry.
