Lasagna Casserole image

So much flavor and warms the tummy on a nice fall day ;)

Number Of Ingredients 17

1/2 lb hot italian sausage, crumbled
1/2 lb ground beef
1 Tbsp olive oil
2 Tbsp garlic, minced
1 medium onion, diced
3/4 tsp red pepper, crushed
2 tsp oregano, dried
1 tsp basil, dried
1 tsp salt
1/2 tsp pepper
4 c chicken broth
1/2 lb rotini pasta
(1) 15 oz can stewed tomatoes, italian or fire roasted
2 heaping Tbsp tomato paste,
1/2 c ricotta cheese
1/2 c parmesan cheese, grated
2 1/2 c mozzarella cheese, shredded

Steps:

  • 1. In a large stock pot, add olive oil, sausage & ground beef; brown.
  • 2. Add onion & garlic, saute with meat about 2 minutes. Add crushed red pepper, saute another minute.
  • 3. Stir in chicken broth, stewed tomatoes, tomato paste, rotini pasta,oregano, basil, salt & pepper. Bring to a boil, then reduce heat to low and let simmer til pasta is tender.
  • 4. In a bowl combine ricotta, parmesan & mozzrella cheeses. Preheat your broiler.
  • 5. Place Lasagna mixture in a large casserole, top with cheese mixture. Place under broiler for a few minutes until cheese is melted and bubbly. Enjoy with crusty bread or garlic bread sticks.
