LAMB SHANKS image

Number Of Ingredients 11

5 tbsp. olive oil
2 large leeks, white and pale green parts only
6 large whole garlic cloves peeled
6 lamb shanks
flour
2 2/3 cups red wine
1 cup canned crushed tomatoes with juice
1/4 oz dried porcini mushrooms
1 1/2 tbsp. herbs de provence
1 1/4 lbs carrots, peeled and diagonally cut
1/2 cup fresh parsley

Steps:

  • Heat 1 tbsp. oil over med heat, add leeks, garlic and sauté until leeks soften. Transfer to small bowl, Sprinkle lamb shanks with salt and pepper, dust with flour to coat. Heat remaining oil in same pot add lamb and cook until brown, turning occasionally about 12 mins. add leek mixture, wine, tomatoes with juice, mushrooms, herbs and carrots. Stir to coat lamb with mixture. Reduce heat to med low, cover and simmer until lamb is very tender, turning twice, about 1hour 30 mins. Uncover and continue , to simmer until sauce reduces slightly aboout 10 mins longer. Spoon off fat season lamb to taste with salt and pepper. Sprinkle with parsley and serve.
