LAMB CHOPS WITH TOMATOES AND OLIVES image

4 lamb chops (around 1.5 inches thick)
1 teaspoon paprika
kosher salt and pepper
1 tablespoon olive oil
4 shallots (cut in half)
1/4 cup flat-leaf parsley
4 plum tomatoes (cut in quarters)
1/4 cup pitted kalamata olives
1 baguette

Steps:

  • Heat oven to 400 F. Season lamb with 3/4 teaspoon salt and 1/2 teaspoon pepper. Heat the oil over medium-high heat in ovenproof skillet. Brown lamb in skillet (2 to 3 minutes per side) Add shallots to skill and transfer the skillet to oven. Cook for 13 minutes. Plate the lamb and add the olives, tomatoes, and parsley to the hot skillet and toss. Serve with baguette.
