Kristen's Baked Oatmeal image

This is a wonderful breakfast or brunch recipe for 8 to 10 people. Even if you aren't an oatmeal fan, adding fruit and nuts to this yummy baked delight will change your mind. Top with chopped nuts, flaxseed meal, yogurt, warmed almond milk, or the toppings of your choice.

4 ½ cups rolled oats
2 ¼ cups kefir
1 cup sucanat
½ cup butter, melted
1 ½ teaspoons ground cinnamon
3 eggs, beaten
½ cup raisins
2 ½ teaspoons baking powder
1 ¼ teaspoons salt

Steps:

  • Mix rolled oats, kefir, sucanat, butter, and cinnamon together in a large bowl. Refrigerate until oats soften, 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x17-inch baking pan.
  • Stir beaten eggs into the oatmeal mixture until fully blended. Add raisins, baking powder, and salt.
  • Bake in the preheated oven until center is set and edges start to pull away from the sides of the pan, 25 to 30 minutes.
