Kohl Slaw image

A terrific way to add kohlrabi into your menu. Serve with wrap and stir-fried tempeh for a yummy lunch. Yummy!

2 tablespoons cherry vinegar
1 tablespoon vegan mayonnaise (such as Follow Your HeartĀ® VeganaiseĀ®)
1 tablespoon agave nectar
1 tablespoon brown mustard seeds
1 teaspoon Dijon mustard
salt and ground black pepper to taste
2 crisp apples, shredded
2 kohlrabi bulbs, peeled and shredded
4 carrots, shredded

Steps:

  • Whisk vinegar, vegan mayonnaise, agave nectar, mustard seeds, Dijon mustard, salt, and pepper together in a bowl until dressing is smooth. Stir apples, kohlrabi, and carrots into dressing until evenly coated. Cover bowl with plastic wrap and refrigerate for flavors to blend, at least 1 hour.
