Kir, and Kir Royale image

When we lived in Scotland, Kir, or Kir Royale were the drinks I enjoyed the most. Royale was a special occasion drink, like Christmas or New Year, and Kir was the typical standby for pretty much everything else.

KIR
cassis
white wine
KIR ROYALE
cassis
champagne

Steps:

  • 1. To make Kir: put a bit of cassis in the bottom of a wine glass, about the size that you see the stem through the bottom of the glass. Fill it with white wine, and stir gently.
  • 2. To make Kir Royale: Put cassis in the bottom of a champagne flute, about the size of a dime. Then add cold champagne and gently stir so the bubbles stay bubbly!
