Steps:
- Precook noodles & plunge in cold water to stop cooking process, toss with sesame oil, put to one side Onion, carrots finely chopped I might have put some celery in, can't remember, usually look in the fridge & see what we have, sometimes use a bit of broccoli, again finly chopped (for colour mostly) Small amount of dried chillies Bit of 5 spice Chuck it all in a very hot wok with generous glug of oil (groundnut or vegetable) Add garlic (usually garlic puree cos it's eeeeasy) Add mushrooms Add oyster sauce Add noodles Add soy sauce I'll have forgotten something, I always do (think it was 5 spice when you were round). Timing is about 5min max from when you first dump the onion etc in the wok, I also sometimes add sweet chili sauce, makes it nice and rich and glossy. Never tastes the same twice, just put nice things in and don't overcook the garlic or noodles & it'll be lush
