~ Kid's Favorite Burritos ~ image

I had one lone large chicken breast I needed to cook. So, the kids suggested I make their favorite Burrito. They would eat these weekly if I'd make them...LOL I grilled my chicken and shredded, but you can use any shredded chicken. Add to or take away to your liking. They are delicious just as they are, though. Enjoy

Number Of Ingredients 16

FOR THE RICE
1 package(s) pouch - success white or brown rice - i used brown today
2 - 3 ounce(s) chopped green chiles from can
1 teaspoon(s) taco seasoning
1 - heaping tablespoon - sweet onion
3/4 tablespoon(s) lime juice
MEAT MIX
1 large boneless skinless chicken breast - grilled and shredded - or 2 cups shredded chicken - your choice - i grilled a breast
1 tablespoon(s) taco seasoning - i use hot
1/2 - 1 teaspoon(s) chili powder
1 cup(s) salsa - heat your preference
1/2 cup(s) frozen corn, thawed
1 - 15 ounce(s) can, black beans - drained and rinsed
4 - burrito sized tortilla's or 8 small tortilla's
shredded - cheddar cheese and sour cream
hot - sauce if desired

Steps:

  • Place your shredded chicken, beans, taco seasoning, chili powder, corn and salsa in a skillet and heat through over low - med heat.
  • Cook your rice according to directions on box, drain well. Mix the rice with taco seasoning, green chiles, lime juice and onion. Set aside.
  • Prepare tortilla according to package directions. Add 1/2 cup meat mixture down the center of your prepared tortilla. Top that with roughly 1/4 cup rice mix. Top with cheese and sour cream. Add some hot sauce if desired. Fold in sides and roll.
  • Cut in half and enjoy.
