Number Of Ingredients 13

2 cups all purpose flour
⅓ cup granulated sugar
1 tbsp baking powder
½ tsp salt
½ cup butter (1 sticvery cold butter (cut into small cubes)
Zest of three small key limes
1 large egg
½ cup heavy cream (cold)
1 tbsp key lime juice
1/2 tsp vanilla extract
⅔ cup powdered sugar
1 tbsp key lime juice
1/2 tbsp heavy cream

Steps:

  • Preheat the oven to 400F
  • In a large bowl whisk together flour, sugar, baking powder, and salt.
  • Add the pieces of cold butter and key lime zest and cut into the dough using a pastry cutter or a fork until texture is a coarse meal. You want the butter to be small, (similar to making pie crust).
  • Lightly whisk together the heavy cream, egg, key lime juice, and vanilla extract. Stir into the butter/flour mixture with a rubber spatula until combined. Do not over-mix.
  • Lay dough out on a lightly floured work surface and knead with a lightly floured hand about 4 times. Pat the dough out to an 8 or 9 inch circle, about 1 inch thick. Cut into 8 triangles
  • Transfer the scones onto a parchment paper or silicone baking mat lined baking sheet. Brush with additional heavy cream or egg wash to help with browning. Place in the fridge for about 10 minutes before baking to ensure the scones go into the oven cold.
  • Bake at 400F for 18-20 minutes until golden brown
  • While scones are cooling, make the glaze. Whisk together heavy cream, key lime juice, and powdered sugar until smooth. If glaze is too thin, add more powdered sugar. If too thick, add more heavy cream
  • Drizzle glaze on top of scones before serving
