These cookies taste like pure summer. The cookie is similar to a sugar cookie with a hint of key lime flavor. The lime isn't overpowering, but you know it's there. You can eat the cookies alone, but if you have a sweet tooth, the lime buttercream adds a ton of sweetness and additional lime flavor.

Steps:
- Cream butter, sugar, and egg. Add lime juice, lime zest, and vanilla to creamed mixture.
- Add a few drops of food coloring to desired green.
- Add dry ingredients and mix well.
- Drop by tablespoon full. I line my cookie sheets with the dull side of aluminum foil up for easy clean-up. You can just pick up the foil and baked cookies and move them to the counter at this point. They will cool there.
- Bake at 350 for 8 - 10 minutes or until lightly browned.
- For frosting, cream the butter. Add the powdered sugar and lime juice a little at a time. Add green food coloring if desired.
- You can frost a single cookie, but I usually make a sandwich cookie out of them. But of course, you get fewer cookies that way. Enjoy!
