Vegan Chocolate Pudding image

The secret ingredient in this chocolate pudding is sweet potato. You need to adjust the amount of almond milk to the size of the sweet potato - more or less, depending on the size of the sweet potato.

1 sweet potato
5 tablespoons almond milk, or as needed
4 tablespoons unsweetened cocoa powder
2 tablespoons agave nectar
2 tablespoons peanut butter
1 teaspoon almond extract

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add sweet potato, cover, and steam until tender, 25 to 30 minutes. Remove and allow to cool. Peel and cut into chunks.
  • Combine sweet potato, almond milk, cocoa powder, agave nectar, peanut butter, and almond extract in a blender; blend until smooth. Add more almond milk if mixture is too thick. Serve immediately.
