Yield 8 bowls

Number Of Ingredients 16

4 slices turkey bacon
2 small onions (chopped)
4 cloves of garlic (mined)
1 cup chopped celery
1 package turkey pesto sausage (sliced)
2 cups tomato puree
2 (14.5 oz) cans stewed tomatoes
1 box chicken broth
water (to desired thickness)
1/4 cup red wine
1 t dried basil
1 zuchini (halved and sliced)
1 yellow squash (halved and sliced)
1 cup uncooked rotini pasta
1 (15 oz) can garbonzo beans, drained
1/4 cup chopped parsley

Steps:

  • In a large stock pot, cook bacon. Add onion and garlic. When onions are translucent, add celery, sausage, pureed tomatoes, stewed tomatoes, broth, water, wine, oregano, and basil. Cook for 15 minutes. Stir in zucchini, pasta, garbanzo beans, and parsley. Cook for 15 minutes. Serve with grated cheese and asian hot sauce.
