KALE AND DELICATA SQUASH SALAD image

Number Of Ingredients 6

2 medium delicata squash
2 T balsamic vinegar
2 T honey
1 large shallot
1 clove garlic
1 can of cannelini beans or cranberry beans, rinsed

Steps:

  • Cut squash into 1/2 inch semicircles, cat with olive oil and bake in 400 degree oven for 15 minutes. Mix honey and vinegar together. Brush mixture onto squash and bake another 5". Saute shallots and garlic. In meantime wash and cut up kale and place in salad bowl. Add beans to bowl and toss. Add remaining honey and vinegar to pan with shallots and garlic. Bring to a boil and pour over greens and toss. Add squash and serve.
