Kahlua Cream Bread (Abm) image

This came from my Bread Maker's Bible. This looks like a fun and decadent tea cake that requires yeast and a dough cycle in a bread machine (accounted for in prep time, my machine has a 90-min cycle.) It's called a cream bread but contains no cream. Omit the wheat gluten if using bread flour. I believe it makes a 1.5-lb loaf. It says that you use more Kahlua, use proportionately less water. This isn't a quickbread though!

2 tablespoons Kahlua
1/4 cup water
1 (15 ounce) can evaporated milk
1 teaspoon salt
1 tablespoon butter
3 cups all-purpose flour
3 tablespoons vital wheat gluten
2 tablespoons brown sugar
1 teaspoon yeast
1 cup milk chocolate chips, approx (see directions)

Steps:

  • Put all the ingredients in your bread machine in the order listed by the manufacturer EXCEPT for the chocolate chips, selecting the dough cycle.
  • When the dough cycle ends, put the dough onto a lightly-floured surface. Cover with a dishcloth and let rest for 10 minutes.
  • Roll the dough out into a big rectangle, and sprinkle with the chocolate chips. Approx 1 cup, more or less, and a mixture of white and chocolate chips would be neat.
  • Roll it up into a loaf, and place into a lightly-buttered loaf pan, cover with the dishcloth, and let rise for 45 minutes.
  • Uncover and slash the top with a knife carefullhy. Brush with milk.
  • Bake at 375F for 25-30 minutes, then let cool on a cake rack.
