Number Of Ingredients 8

1 10 oz. package chopped frozen spinach.
1 medium onion. chopped
1 clove garlic, finely minced
2 Tablespoons olive oil
1 pound ground sirloin
6 ounces mushrooms, sliced
4 eggs, lightly beaten
salt and pepper to taste (or a good shot of Butcher Shoppe seasoning).

Steps:

  • Thaw frozen spinach and squeeze as much liquid out as possible In a heavy large skillet saute onion, garlic, and mushrooms in the olive oil until onion is transparent. Add beef and brown thoroughly. Sprinkle with salt and pepper and stir in the chopped spinach. Keeping the heat high, add eggs to the skillet, stirring constantly until eggs are set. Top with grated cheese.
