Jodie's South Western Meatloaf image

Meatloaf has been a family favorite around my house since I can remember. If we ever have any left over then we slice it and fry it and make sandwiches out of it...It goes great with baked potato and salad....

Number Of Ingredients 10

2 pound(s) ground sirloin (lean)
2 large eggs
1 1/2 cup(s) oatmeal, uncooked
1/2 cup(s) salsa verde
1/2 cup(s) salsa
1 teaspoon(s) salt
1/2 teaspoon(s) sage, dried
1 teaspoon(s) garlic
1/4 cup(s) evaporated milk
1 can(s) tomatoes (fire roasted)

Steps:

  • Preheat oven to 400* You will need a cake pan 9" In a large bowl, place ground sirloin, eggs, oatmeal, both salsa's, salt, sage, garlic, and milk..
  • Mix thoroughly with spoon or hand (prefer hand) Make a loaf and place in to cake pan...Pour fire roasted tomatoes over the top and place in the oven.
  • Being it is 2 pounds of beef baking time is 1 hour and 15 minutes Depending on your altitude. Stick steak knife in center must come out clean is done...
