6 medium apples (fuji is best)
3 tsp cinnamon
1-2 Tbsp splenda sugar blend
3 Tbsp splenda brown sugar blend
2 3/4 c flour, sifted
1 Tbsp baking powder
1 tsp salt
1 c canola oil
1 1/4 c splenda sugar blend
1/4 c orange juice
2 1/2 tsp vanilla extract
4 eggs
1 c chopped walnuts

Steps:

  • 1. Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into bite-sized chunks. Toss with cinnamon, 1-2 tbsp Splenda Sugar Blend and the Brown Sugar Blend - set aside.
  • 2. Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, and then add eggs, one at a time. Stir in chopped walnuts. Scrape down the bowl to ensure all ingredients are blended together.
  • 3. Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. You can sprinkle top with additional chopped walnuts. Bake for about 1-1/2 hours, or until a toothpick comes out clean.
