Jellied Beet Salad image

Number Of Ingredients 8

1 package lemon-flavored gelatin (low-calorie is fine)
1 cup boiling water
1 teaspoon salt
2 tablespoons horseradish
2 tablespoons vinegar
1 tablespoon chopped onion
1/2 cup beet liquid
1 1/2 cups diced (cooked or canned) beets

Steps:

  • Mix gelatin and boiling water and stir until gelatin is dissolved. Add all other ingredients except beets and chill until slightly thickened. Fold in beets and spoon mixture into a well-rinsed and lightly oiled mold. Chill thoroughly. At serving time, turn out on chilled plate and serve with a sauce of equal parts mayonnaise and sour cream or plain yogurt.
