Steps:
- 1. Heat oil in large heavy pot. Add onions, shallots, garlic, bell pepper, 2 teaspoons salt and 1 teaspoon cayenne pepper. Stir and brown vegetables for 20 minutes.
- 2. Add the sausage and continue browning, cooking about 15 minutes.
- 3. Season chicken with remaing salt and cayenne pepper. Add to the pot with the bay leaves. Add rice and stir for 2-3 minutes.
- 4. Add the water/broth, stir, and cover pot. Cook for 35 minutes (until rice is tender, and all the liquid is absorbed. Remove from heat and let stand 2-3 minutes before serving. Enjoy!
