Jalapeno Popper Chicken image

4 Boneless skinless chicken breast
4 large jalapenos
12 pieces bacon
2 tablespoon sweet rub
1/2 cup bbq sauce
4 ounce cream cheese softened
4 ounce cheddar cheese shredded
1 tablespoon sweet rub

Steps:

  • preheat smoker to 250 degrees for indirect heat. use a mild wood like apple.
  • slice chicken breasts in half but don't cut all the way through. cut jalapenos lengthwise and remove seeds and ribs. mix cheeses together with 1 tbl of sweet rub. stuff jalapenos. place one popper in each chicken breast and fold it closed. wrap each chicken breast with bacon and secure the bacon ends with toothpicks. season all sides of the chicken with sweet rub
  • cook in closed lid smoker until internal temp of 150 - about an hour and a half. baste the chicken with the bbq sauce on all sides and close the smoker lid and cook until internal temp of 165.
  • allow chicken to rest for 10 minutes.
