Jalapeno Pecan Brittle image

How to make Jalapeno Pecan Brittle

Number Of Ingredients 9

1 c salted pecans
1 c sugar
1/4 c water
1 1/4 chopped jalapeno
1/2 c light corn syrup
1 1/2 tsp vanilla extract
1 tbsp soft butter
1 1/4 tsp baking soda
oil or butter for greasing baking sheet

Steps:

  • Line a baking sheet with foil or parchment paper. Grease with butter or oil. Set aside.
  • Measure out all your ingredients. This entire process moves pretty quickly. No time for measuring once the sugar and syrup are ready.
  • Bring to a soft boil the water, sugar, and syrup. Then bring to a full on hot boil for about 10 minutes. Do not stir. Swirl the mixture by moving the pan over the heat a couple of times. The mixture will turn golden and will start to smoke. Remove from heat.
  • Armed with a wooden spoon, quickly mix i the pecans, butter, jalapenos and baking soda into the sugary, syrupy, mixture. Immediately pour onto prepared baking sheet. Smooth it out to form a nice golden sheet of pecans.
  • Let it cool. Then break into pieces and y'all enjoy. It tastes sweet, salty, and spicy. Wonderful.
