Steps:
- Line a baking sheet with foil or parchment paper. Grease with butter or oil. Set aside.
- Measure out all your ingredients. This entire process moves pretty quickly. No time for measuring once the sugar and syrup are ready.
- Bring to a soft boil the water, sugar, and syrup. Then bring to a full on hot boil for about 10 minutes. Do not stir. Swirl the mixture by moving the pan over the heat a couple of times. The mixture will turn golden and will start to smoke. Remove from heat.
- Armed with a wooden spoon, quickly mix i the pecans, butter, jalapenos and baking soda into the sugary, syrupy, mixture. Immediately pour onto prepared baking sheet. Smooth it out to form a nice golden sheet of pecans.
- Let it cool. Then break into pieces and y'all enjoy. It tastes sweet, salty, and spicy. Wonderful.
