Italian Pumpkin Strata image

Dense and creamy- this vegetable filled strata with bread, cheese, milk, pumpkin and eggs creates a moist and delicious casserole- cut this into squares or wedges and serve with fresh fruit for a smashing brunch !! Recipe from Carnation Milk.

1 Tbsp vegetable oil
1 lb sweet italian sausage, casing removed
1 small onion, chopped
1/2 c each of red and greed bell peppers
2 clove garlic, finely chopped
1 loaf italian bread,cut in 1 1.2 inch cubes
2 c shredded mozzarella cheese
2 can(s) (12 oz. each) evaporated milk
15 oz. can(s) pure solid pumpkin
4 large eggs
1 tsp salt
1/2 tsp pepper
1/2 tsp each dried oregano, marjoram and basil, all crushed

Steps:

  • 1. Heat oven to 350^. Spray a 13x9-inch baking pan with non stick baking spray. Heat oil in skillet over medium -high heat; add sausage, onion,bell peppers and garlic. Cook stirring to break up sausage, 7-10 minutes or until sausage is no longer pink; drain. Combine bread cubes, cheese, and sausage mixture in a large bowl. Beat milk, pumpkin, eggs, salt, pepper, seasonings in a medium bowl. Pour mixture over bread mixture, stirring gently to moisten bread. Pour into prepared pan. Bake 30-35 minutes or until set. Serve warm.
