Italian meatloaf image

I came up with this idea while making spaghetti one night. I'm sure it's not something new, but the fun part is....you can put pretty much what you would put on your favorite pizza in it. If there is any leftover, I usually reheat, chop it up and make what I call Italian tacos(rolled up in flour Tortillas). Makes for a good lunch or after school snack. Or roll out biscuits, spoon on a little tomato sauce, top with left overs and bake for about 6 minutes......mini pizzas.

Number Of Ingredients 11

5 pound(s) hamburger meat
2 teaspoon(s) italian seasoning
1 teaspoon(s) pepper
1 large tomato diced
1 can(s) diced black olives drained
3 - eggs
1/2 cup(s) flour
2 can(s) tomato sauce
2 cup(s) shredded cheese (i use mozzarella)
1 large onion diced(or 1bunch green onion diced)
1 teaspoon(s) minced garlic

Steps:

  • Set tomato sauce and half of the cheese aside.
  • In a large bowl mix by hand all ingredients.
  • In a baking pan, shape into a loaf. Top with tomato sauce evenly. Bake on 350 degrees for about 45 minutes or until sauce starts turning brown, draining fat as needed.
  • Remove from oven and sprinkle remaining cheese on top. Let stand until cheese has melted or you can put it back in the oven for melting.
