CAULIFLOWER, POTATO & CHEESE SOUP image

Number Of Ingredients 12

2 cups potato, large dices
2 cups cauliflower pieces
1 cup carrots, chopped
3 cloves garlic
1 cup onion, chopped
1 1/2 tsp salt
4 cups chicken stock
1 1/2 cups mild cheddar cheese, grated
3/4 cup milk
1/4tsp dill weed
1/4 tsp dill seed or caraway
1/4 tsp dry mustard

Steps:

  • Bring potato, cauliflower, carrots, garlic, onion, salt and stock to simmer and cook for 15 minutes. Let cool and puree until smooth. Wisk in cheese, milk and spices.
