ITALIAN KALE SOUP (ZUPPA TUSCANO) image

Number Of Ingredients 9

5 Italian sweet or hot sausages
2 medium potatoes cut in half lengthwise and sliced 1/4"slices
3/4 Cup onions, diced
6 slices of bacon diced
1 1/2 tespoons minced garlic
3 1/2 cups of sliced kale
2 tablespoons chicken base
1 qt. water
1/2 Cup of heavy cream

Steps:

  • Poke a couple of small holes in sausages and fry in medium pan on medium heat until done. Remove from pan and cut lengthwise then into 1/2" slices. Cook onions, garlic and bacon in same pan used for sausages. Remove bacon and crumble. In large pot add chicken base, drippings from pan meat was cooked in, water and potatoes and simmer until potatoes are done. Add bacon, sausage, kale and cream and simmer for about 4 minutes.
