Italian Ground Turkey Sandwiches image

This is a quick and easy dinner and if you end up having left over turkey mixture you can cook a cup of rice and mix it in and use the mixture for stuffed bell peppers another night.

2 1/2 lb lean ground turkey
1 medium onion, chopped (1/2 cup)
2 tsp garlic, finely chopped
1 jar(s) (48 oz) chunky garden vegetable pasta sauce
1 can(s) (6oz) tomato paste
1 can(s) black olives (sliced and drained)
12 french rolls, split
6 slice mozzarella cheese, cut in half

Steps:

  • 1. Spray 12-inch nonstick skillet with cooking spray; heat over medium heat. Cook turkey, onion and garlic in skillet 6-8 minutes, stirring frequently, until turkey is no longer pink;drain.
  • 2. Mix turkey mixture, pasta sauce, tomato paste and olives in slow cooker.
  • 3. Cover and cook on low heat setting 4 to 5 hours. Fill each roll with 1/2 cup turkey mixture and a half slice of cheese, cutting to fit.
