Island Tater Tots image

Great recipe for that holiday buffet table- you and your guest are going to love this take on the 'ol tater tot casserole. Full of pineapple, onions, cheese, potatoes and of coarse BACON, served with a rich cream sauce. What's not to love! Enjoy This recipe has been tweaked a bit by me.

Number Of Ingredients 13

ISLAND BACON ONION MIXTURE:
16 ounce(s) bag tater tots
- salt and pepper to taste
2 teaspoon(s) canola oil
8 slice(s) bacon ,chopped
3/4 cup(s) pineapple chunks, fresh or canned
1/4 cup(s) red onion, diced
3/4 cup(s) shredded pepper jack cheese
SAUCE:
1/2 cup(s) mayonnaise
2 tablespoon(s) ketchup
1 tablespoon(s) ground mustard
1 tablespoon(s) tabasco sauce

Steps:

  • Deep fry or bake tater tots until golden brown and crispy according to package directions.Season with salt and pepper. Place on platter .
  • Heat a small skillet until hot, then add the canola oil,place bacon pieces in skillet and cook partway, then add the pineapple and onions. When bacon is almost finished cooking, spread the mixture out thin and even in the skillet keeping the ingredients close together. Top with the cheese.
  • Once the cheese is fully melted, pour the "sauce recipe" below, over the tater tots on the platter. Remove the bacon-pineapple -onion-cheese mixture carefully with spatula from the skillet and place on the tatter tots..Serve while hot.
  • Sauce: Combine all ingredients and mix until smooth.
