IRISH PEAS, recipe from Ireland image

My neighbor suggested I try this tasty recipe. It is from her aunt in Ireland. Quick and easy, with a different mint taste twist. Makes a wonderful side dish. I never would have thought to cook peas this way, when we had a farm and canned peas by the bushel!! Oh! them day gone by....when both boys would help me shell our home...

Number Of Ingredients 6

3 lb fresh peas in the pod, shelled, or two packages (10 oz. each) of frozen peas.
1-3 sprig(s) mint
1 tsp sugar
boiling, salted water
1 Tbsp butter
salt & pepper to taste

Steps:

  • 1. Shell the fresh pea pods.
  • 2. Cook peas, with mint and sugar in the boiling water, until peas are tender. 5-7 minutes.
  • 3. Drain, stir in butter, salt & pepper. Serves 4-6 An excellent side dish. Quick and easy
