Irish Ginger Snap Cookies image

1 cup dark brown sugar
1 egg
1/4 teaspoon salt
3/4 cup butter, softened
2 cups flour
1/2 teaspoon baking soda
1 teaspoon ground cloves, ginger and cinnamon (each)
2 tablespoons granulated sugar (for coating)

Steps:

  • Preheat oven to 350 degrees.
  • Cream brown sugar, egg, salt and butter until light and fluffy.
  • Add flour, baking soda and spices. Beat in at a low speed until just incorporated and moist.
  • Roll teaspoonful of dough into balls and roll in granulated sugar to coat.
  • Bake for 8 to 14 minutes until lightly browned and set.
  • Cool on wire racks and store in air-tight container.
