Absolutely delicious!! Serve with any chip you want, but Doritos Nacho cheese is what we do at home. Although I like to cook healthy, this is definitely a high fat indulgent treat!!

Steps:
- 1. Dice onion and saute in the stick of butter in a medium to large pot until soft.
- 2. Once onion is soft, add 1 can of stewed tomatoes undrained.
- 3. While tomatoes are warming with the onion mixture, cut the 8-16 oz brick of pepper cheese in to small cubes and add to mixture in pot. Cover and simmer until cheese is melted, checking and stirring often.
