I had to prepare something to take to a party tonight, and after working all day, I had no ideas. This is what I threw together, and it got such good reviews, I figured I'd best write it down. Enjoy! (Measurements are approximate, since I wasn't measuring when I made it. Adjust to suit your taste.)

Steps:
- 1. Melt butter in a saucepan over medium-high heat. Add onions and tomatoes and cook until onions are translucent. Reduce heat and stir in spinach and garlic.
- 2. Cut cream cheese into small chunks and add to saucepan. Stir until well mixed and smooth.
- 3. Add chicken to saucepan and stir until all ingredients are incorporated. Add salt and pepper to taste. Remove from heat and set aside.
- 4. Preheat oven to 400 degrees F. Place three mini muffin pans on a large cookie sheet. (This is to make them easier to get in and out of the oven - not completely necessary)
- 5. Unfold puff pastry sheet onto a lightly floured surface and roll to about half original thickness. Be sure to use enough flour to keep the pastry from sticking, but don't overdo it!
- 6. Using a 2" biscuit cutter, cut pastry into circles. Press one circle into the bottom of each section of mini muffin pans. The pastry should extend only about half-way up the side of the sections.
- 7. Place about 1 tablespoon of chicken filling into each pastry lined muffin section. Filling should pile up in the middle, leaving the edges of the pastry exposed.
- 8. Lightly sprinkle the filling with parmesan cheese, then bake for 30 minutes. Serve hot. Makes about 36 appetizers.
