HOT AND SOUR SHRIMP image

Number Of Ingredients 12

1 pound medium-sized raw shrimp, shelled and deveined
1 tablespoon dry sherry
Cooking sauce
3 tablespoons salad oil
3 cloves garlic, minced or pressed
1 1/2 tablespoons minced fresh ginger
1/4 teaspoon crushed red pepper
2 large stalks celery, cut into 1/2-inch-thick slices
1/2 cup sliced bamboo shoots
2 green onions (including tops), thinly sliced
Cooking Sauce:
Stir together 1/4 cup distilled white vinegar, 2 tablespoons soy sauce, 5 teaspoons sugar, and 2 teaspoons cornstarch.

Steps:

  • In a bowl, toss shrimp with sherry. Prepare Cooking Sauce and set aside. Place wok over high heat; when wok is hot, add 1/2 tablespoons of the oil. When oil begins to heat, add garlic, ginger, and red pepper; stir once. Then add shrimp and stir-fry until shrimp turn pink (about 3 minutes). Remove from wok and set aside. Pour remaining 1 1/2 tablespoons oil into wok. When oil is hot, add celery and bamboo shoots and stir-fry for 1 minute. Stir Cooking Sauce, then pour into wok. Stir in shrimp and onions. Stir until sauce boils and thickens. Makes 3 or 4 servings.
