I make these for my hubby whenever he wants oatmeal cookies. They are just the right amount of crunchy on the outside and chewy on the inside. Hope you like them.

Steps:
- 1. Preheat oven to 350 degrees.
- 2. In a medium sized bowl, sift together the flour, baking soda, baking powder, cinnamon and salt. Set aside.
- 3. In a large bowl, cream together the butter and sugar until fluffy.
- 4. Add the honey and orange extract. Beat until fluffy.
- 5. Add the eggs, one at a time, and beat until fully incorporated.
- 6. Mix in the craisins, cinnamon chips, oats and nuts (if desired).
- 7. Add flour mixture and mix well.
- 8. Roll into 1 inch balls and place on ungreased cookie sheets. Bake for 13-15 minutes, or until lightly browned around the edges.
- 9. Place cookies on wire rack until completely cooled.
