Steps:
- 1. In a 12 inch skillet, heat 1 inch of water to boiling.
- 2. Add carrots and re-heat to boiling.
- 3. Reduce heat and simmer 10 minutes until tender-crisp. Drain VERY well.
- 4. Toss with honey and mint.
