Honey-Mint Carrots image

This is one of the few ways the kids actually like carrots.

Number Of Ingredients 3

6 medium carrots, cut into 1/4 inch slices (about 3 cups)
1 Tbsp honey
1 Tbsp fresh mint, chopped (or 1 tsp. dried mint)

Steps:

  • 1. In a 12 inch skillet, heat 1 inch of water to boiling.
  • 2. Add carrots and re-heat to boiling.
  • 3. Reduce heat and simmer 10 minutes until tender-crisp. Drain VERY well.
  • 4. Toss with honey and mint.
